rainbow fruit and veggie snack board

Healthy snacks don’t have to be boring. In fact they can be fun, pretty and delicious. Recently I shared a few of my favorite healthy snacks over on Instagram stories and then decided to make a beautiful snack board out of some of them. I also wanted to honor that June is pride month so why not go rainbow order! With fruits and vegetables it’s so easy to get a gorgeous colored board without trying that hard. I promise it’s way simpler than it looks.
First, cut up all the fruits and veggies you plan to use. This makes it easier to decide where to place different shapes. Then, line them up in rainbow order on the table. Go back to Kindergarten here and think Roy G. Biv or ROYGBIV: red, orange, yellow, green, blue, indigo and violet. Next, start with red and place a few of each item on the board. Don’t place it all just yet. Then add the orange, then yellow and so on until you have every color across the platter. This helps with layout. The last thing you want is to get half way through your colors, but all the way across the board and have to start over. Trust me. Try to alternate textures and cuts to make sure you don’t have similar things next to each other. Sometimes it’s unavoidable, but do the best you can.
Once you have everything laid out like you want it, now is the time to fill it in. Fill it in and stack it high; it will go faster than you think.

Board or Tray — I used a round board because i wanted to give a sense of a real rainbow, but honestly you can use any shape you want. If you do a rectangle, it’s fun to start in one corner and move diagonally instead of straight across. A little more unexpected and fun.
