one pot broccoli chicken pasta recipe

Let me just start by saying I am not a food blogger. But I do love food — I’m your basic fat kid at heart and I have eating habits like a 5 year old. There were actually years of my life that I survived off bean dip and tortellini. Basic food groups, right?!

Well over the years, I finally got a desire to start cooking. Some say it’s because of Jamie, some might also say it’s because I finally didn’t work 12 hour days and had some extra time on my hands. In either case, my cooking journey didn’t start until recently, but it’s been so much fun to learn new recipes and try new things in the kitchen.

One of my favorite types of recipes to make are one pot meals. I mean…hello?! Less clean-up! Plus, they are super easy introductory recipes for someone that doesn’t consider themselves a professional in the kitchen. Do you want to start cooking but have no idea where to start? One pot recipes are perfect for you.

So today I’m making a one pot dish with broccoli, pancetta, chicken and pasta. Typically I would have made this dish with a fettuccine, but quarantine has us on lock down right now and I did not have that in my pantry. Since I wasn’t going to the store, I used what I had on hand, and it still worked perfectly. Goes to show you can substitute almost anything in this dish and it will still work out just fine. I mean fettuccine is a main component! Don’t have broccoli on hand? Substitute peas. No pancetta? Use bacon instead! The basic direction of this recipe can be used for almost any one pot pasta dish.

Okay, enough of my rambling, let’s get to it.

30 minutes | serves 4

directions

  1. Fry the pancetta in a large pan (you’ll want to use one that has a lid) over medium-high heat until crispy.

  2. Add the chicken and sauté until cooked through and golden brown.

  3. Add the garlic and fry until fragrant. Season with salt and pepper.

  4. Pour in the milk and chicken broth, stir and bring to a gentle simmer. Do not boil.

  5. Reduce heat and add in your pasta. Stir occasionally until your pasta begins to soften (about 5 minutes).

  6. Add in the broccoli, stir and then cover with a lid. Cook until pasta is al dente (about 7 minutes).

  7. Stir in the parmesan cheese and mix until cheese is melted through the sauce.

  8. Enjoy!

  • 1/2 cups pancetta

  • 1 large chicken breast, cut into 1-inch pieces

  • 2 cloves garlic, minced

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 1/2 cups chicken broth

  • 1 1/2 cups whole milk

  • 2 cups dry pasta (about 1/2 pound)

  • 2 cups broccoli florets

  • 1/2 cup parmesan cheese
