weekly recap + my 2020 motto

Happy New Year!! I’ve been doing a little self reflection over the last week and I shared a little bit about it on my top nine Instagram post. This last year definitely didn’t go like I had planned it. Whether that was work or personal or what have you; I had a few things that I thought would be different by now. Or that I thought would change in some way. But lately I'm reminding myself that it isn’t up to me. I don’t get to plan the way my life goes. The big man upstairs already has that figured out and I’m learning to trust in His timing.
A lot of people I’ve talked to have skipped resolutions this year and instead adopted a word for 2020. Something like “mindfulness” or “self-acceptance” or “compassion”. I love this idea but instead of choosing a word, I chose a phrase. And I chose a phrase that definitely sums up my most recent self-reflections.

I was scrolling through an old Pinterest board when I saw this phrase. I had pinned it to a board called “happy” a few years ago. So when I saw it, I knew immediately that it was going to be my focus this year. I’m even going so far as putting it on a chalkboard in my office. It’s going right next to my vision board for 2020.

recipes we tried
Lemon Chicken and Risotto — this was a definite keeper recipe! The lemon chicken was amazing and the sauce that it made could go on anything! And I was shocked at how easy and delicious the risotto was. I mean who would have thought you could just throw it all in there and be done!
Shredded Chicken Tacos — this recipe was a lot like the slow cooker one we do, but it was done in quarter of the time. So amazing for a quick and easy week night dinner. We also made Mexican Rice with it. I wasn’t thrilled with this because it tasted a little too tomato-y for my taste, but the fluffy texture was perfect!
Steak and Baked Potatoes — Jamie did the steak on a cast iron skillet (the best thing ever) and did the potatoes in the pressure cooker. He also air fried them for a few minutes at the end to get the skin a little crispy. That was my favorite part!
Easy Beef Stroganoff — we tried a new recipe in the pressure cooker for this. It’s hard because I love our original stroganoff recipe so much, but this one was still delicious. And so much easier! Basically threw everything in the pot and let it cook for 8 minutes. Talk about any easy dinner!
