Week one of 30 days to healthy living is complete! I’ll be honest it wasn’t that hard — when you have the right mindset and you’re prepared, you don’t think twice about it. We ate delicious meals like chicken piccata, taco salad and turkey burgers; and I found new snacks I love like Sea Salt Almond Flour Crackers and The New Primal Beef Thins.

There’s also only on week left in Lent. Can you believe it’s almost Easter?! Time is flying! I’ve kept up with my Lent sacrifice of no shopping. Surprisingly it’s been really easy. Don’t get me wrong, I have a small list going of things I need for the house come April 5th, but it’s nothing crazy. And I’ve found that when I save clothes to that list, a week later I’m over them. Maybe I should do that kind of list building more often 😂

Other exciting news this week — my Peloton arrives on Thursday!!! I cannot wait, I’m so dang excited. I cleared a space in the office yesterday for where it’s going to go. If you have a membership, let’s follow each other; I’m always looking for accountability buddies! My username is cerriously.

spring crudités platter

Last week was Spring share week over on Instagram stories. I teamed up with five amazing ladies to share all the Spring inspiration for you guys. We did everything from new Spring arrivals, to home decor and organization to new ways to style your Spring dresses. On my day, I shared a small how-to for making a Spring crudités board. This would be the perfect addition to your Easter celebrations next weekend!

I started with a round flat wood board, but you can use any board you have on hand. Start by placing a bowl in the middle as a base for the hummus. This also gives you something to work around. Placing the first vegetables on the board can be intimidating — it’s hard to know where to start. Always remember, nothing is permanent. If you start placing things and don’t like how it’s looking, you can move it! Don’t feel like you have to get it right the first time.

I started with the cucumber and celery sticks. Place a handful on the board so the ends are touching the hummus bowl (you may have to trim your veggies depending on how you cut them, I know I did). Next, do the same thing with a vegetable that’s the complementary (opposite color on the color wheel) to the vegetable you did first. In my case, that would be orange carrots, and place them next to the first vegetable. Now that you have a base, continue working your way around the board alternating colors.

After you have a foundation of where everything is going to go, it’s time time to fill it all in. Your goal by the end is to not see the bottom of the board. If you think you’re overfilling it, you’re not. I promise. Little holes can be filled with your smaller items like kumquats, radishes or tomatoes. I like to use clusters of them to add definition and texture. The last step is the “pretty” step. Add a few edible flowers to the various spots on the board. This makes everything just scream Spring!
