clean eating snack board

So many people I know, including my close group of friends, are trying to eat healthy right now. I think it’s in part due to starting the new year off on the right foot; it’s also because we’ve all been stuck at home and gained the quarantine 15. Whoops. Whatever the reason, I am always an advocate for eating clean. What you put in your body makes so much more of an impact on your life than I ever used to imagine. Watching what my older brother went through this last year also really put everything into perspective. If you’re new here, my brother was diagnosed with a rare form of lung cancer, stage four, at age 35. He’s been on medication and doing great, but one of the many major life changes since his diagnosis was eating clean.

So when I was craving to make a meat and cheese board recently, I decided why not make one, but a healthy version?! And that’s exactly what I did.

I alway start out making my boards the same way. Place the large items — in this case that’s the bowl. This gives you a base to start with and something to work around. It’s hard to start with a blank canvas. Next, place other larger items or items that will stay up on their own — think grapes, apple slices, strawberries. As you get those on the board you start to make areas or groves where you can place the smaller things. The last thing you place are the fillers, like nuts, because those would otherwise spill all over the place.

Once you have everything where you want it placed, fill it up. You basically don’t want to see the bottom of the board. It’s also much more welcoming to eat when it looks plentiful. No one likes to take the last one of anything so if it feels empty it’s going to uninviting.

PS: If you are transporting this — wrap in plastic wrap all the way around the board. Start at the top and go up and over as many times as it takes to cover the entire thing. Some people call it a cater wrap, but this keeps the items on the edge of the board secure so they don’t try to wonder off during the car ride.

  • Cheese Board — I use this one from Target. It’s a great size and I love the edges on it; makes it way easier to transport!

  • Small Bowls — I actually used a 1 cup measuring bowl from Hearth & Hand for this platter. But I also love this set from Williams Sonoma — it comes with 4 bowls and I use them for everything.

  • Pistachios

  • Roasted Marcona Almonds

  • Mediterranean Hummus

  • Green Grapes

  • Blackberries

  • Blueberries

  • Strawberries

  • Raspberries

  • Dried Apricot

  • Dates

  • Lucy Apples

  • Kumquats
