the easiest homemade fruit tart recipe

I have three roles at family functions — look the cutest, drink all the wine, and bring a delicious dessert. So when the weather heats up and the fresh fruit starts showing up at the farmers market, all I want to make is fruit tarts. And also ice cream, but I’ll get to that at a later date, today I’m talking fruit tarts.

I made this one recently for a family barbecue and I got so many requests for the recipe that I had to share it.

This fruit tart recipe is beginner level — I promise you can do it. Then make sure to snap a picture and share it with me! Use #cerriouslyimadeit so I can see them!

  1. Preheat the oven to 350 degrees F.

  2. For the crust: combine flour, confectioners sugar and butter in a stand mixer or food processor until the mixture forms a ball. With your fingers, press the dough into an 11-inch tart pan with a removable bottom, making sure to push the dough into the indentations on the sides. Pat until the crust is even. Bake for 12 minutes or until very light golden brown. Set aside to cool.

  3. For the chocolate filling: break the chocolate bar into pieces and place in a microwaveable safe bowl. Top with vegetable oil and microwave until melted. Spread over the cooled crust and place in the freeze to harden, about 5 minutes.

  4. For the cream filling: beat cream cheese, confectioners sugar, and vanilla together until smooth. Spread over chocolate layer.

  5. For the toppings: place blackberries around the edge of the crust, then follow with blackberries. For the next circle, use kiwi slices followed by mango, and then add a circle of strawberries. Cluster the raspberries in the center of the tart.

  6. For the glaze: microwave the jelly until it’s liquid. With a pastry brush, dab on top of the fruit.

  7. Keep the tart in the refrigerator. Remove about 20 minutes before serving.

Crust:

  • 1 1/2 all-purpose flour

  • 1/2 cup confectioners sugar

  • 1 1/2 sticks unsalted butter, sliced

Filling:

  • 1 bar semi-sweet chocolate

  • 1 tsp vegetable oil

  • 1/2 cup cream cheese

  • 1/2 cup confectioners sugar

  • 1 tsp vanilla extract

Topping:

  • Blackberries

  • Blueberries

  • Kiwi, sliced

  • Mango, sliced

  • Strawberries, sliced

  • Raspberries

Glaze:

  • 3 Tbsp red currant jelly (or other jelly flavor of choice)
