weekly recap: january week 4

I went to a 90’s themed sleepover last night so I’m on a bit of recovery mode this morning. We had so much fun reminiscing and playing all the games. We spun each other around blindfolded before attempting to pin the tail on the donkey, planned out our futures with a friendly game of MASH and topped it off with a scavenger hunt, earning extra points for documenting the shenanigans on the internet. Needless to say, we had a fun night. Plus everyone dressed the part which was extra entertaining.

recipes we tried
Creamy Lemon Chicken — a new favorite of ours. We ended up doing it with brussel sprouts versus asparagus because it’s what we had on hand, but it was still so delicious. We’re definitely making this one again!
Pickle Whole Chicken — this is in the pressure cooker which is amazing because it’s a whole chicken done in 35 minutes. The recipe claimed to make chicken that tasted like Chick-fil-A…I’m not sure it accomplished that, however it was one of the moistest chickens we’ve ever made!
Loaded Potato Soup — so good! However, it was a little plain. It almost felt like eating a version of chunky mashed potatoes. We’d make this again but doctor it up a little more; maybe adding chicken or peas.
Chicken Fajitas — we made a version of this recipe and it was amazing. We’ve basically loved everything we’ve made in the cast iron pan. If you don’t have one yet, I would highly recommend it!
